Wine Bitten

Bobotie:  South Africa's spiced minced meat dish:  its diversity makes it wine friendly

Ingredients:

2 lemons

3 Slices stale bread, crust
removed

1 cup milk (1/4 cup for
soaking bread, rest to mix with eggs)

2 onions, minced

2 garlic gloves, chopped

1 tbsp. ginger, chopped

1 tbsp. curry powder

1 tsp. turmeric

½ tsp. ground coriander

½ lb ground beef

½ lb ground lamb

Salt and pepper 

6 tbsp. slivered almonds

¼ cup raisins

10 dried apricots, chopped

3 tbsp. mango chutney

3 eggs

4 bay leaves

DIRECTIONS

  • Zest  1 lemon
  • Thinly slice another lemon
  • Break bread into large
  • chunks, soak in ¼ cup milk
  • Preheat oven to 350 degrees
  • Sauté  (sweat) onions for a few minutes
  • Add garlic, ginger, curry
  • powder, turmeric, and coriander
  • Cook 1 minute more
  • Add meat, season with salt
  • and pepper
  • Turn up heat, sauté a couple
  • minutes, stirring.
  • Place it all in a bowl, mix
  • in the almonds, raisins, apricots, chutney and bread
  • Put it in a 8x8 baking dish
  • Beat eggs with ¾ cup milk
  • Top the meat with the
  • egg/milk
  • Garnish with lemon wedges and
  • bay leaves
  • Cook for 40 minutes
  • Let stand another 10-15
  • minutes
