Pork Ragout
Ingredients for 4:
1 lb thin sliced pork loin chops: cut into bite sized cubes
4 oz hot turkey Italian sausage
1 sprig chopped fresh rosemary
1 cup chopped onion
1/2 can chicken broth
1 cup red wine (whatever you are serving, or a Malbec)
28 ounce can chopped tomatoes
Grated Pecorino to taste
Egg Noodles or other pasta for 4
Prepare:
- Over medium high heat, saute sausage till it crumbles and browns.
- Remove sausage, reduce heat to low, add onion and some salt, saute slowly till caramelized.
- Add pork and increase heat to medium high to saute quickly (about 4 minutes), stirring.
- Add broth and wine, stirring. Reduce to about 1/2 of the liquid.
- Add tomatoes, bring to boil, reduce heat and simmer for 30-40 minutes until sauce is thickened.
- Serve over pasta with cheese sprinkled to taste.
